古时候的夏威夷,有一种专为庆祝特殊场合而设的宴会,称为“ahaaina”,其中“aha”意思是“聚会”,而“aina”意思是“用餐”。共同庆祝特殊的场合是重要的文化习俗。此外,人们还认为特定的食物代表了特定的品质和属性。在古代的那段时期,女人们不允许与男人们一同用餐,也不允许吃特定的食物。1819 年,卡美哈美哈国王二世 (Kamehameha II) 结束了传统习俗,开启了新的时代。他举办了特别的“ahaaina”来庆祝这一事件,在这次宴会上,女人们受邀与男人们一同用餐,这标志着社会规范的剧烈变革。
随着时间的推移,“luau”一词成为了这类特殊聚会的常用词汇。 “Luau”是指芋头的叶子,时常与其他许多菜肴一起出现在这些特殊的宴会上。

- 芋泥 (Poi):压碎的芋泥,属于淀粉类食物,可以随意搭配其他食物食用。
- 卡鲁瓦烤猪 (Kalua Pig):使用 imu 或地下烤炉熏烤全猪,然后撕开食用。
- 加碎鸡肉的粉丝面条 (Chicken Long Rice):带汤的鸡肉面条,佐料有粉丝和姜。
- “捞捞”菜 (Laulau):一种把切碎的肉包在芋叶 luau (taro) 中蒸煮的菜肴。传统上,使用称为 imu 的地下烤炉制作这道菜肴。
- 夏威夷三文鱼冷盘 (Lomilomi Salmon):三文鱼、西红柿、圆葱和碎冰制作的配菜。
- 椰丝布丁 (Haupia):椰丝做的布丁。
- 夏威夷海鲜盖饭 (Poke):这词直译为“横切成块”,通常是使用各种作料,例如黄豆酱 (shoyu)、大葱、坚果 (kukui nut)、海菜 (limu)。但是,该菜肴主料不一定是鱼,也可以使用其他食材。
